What are food safety due diligence records?

In food law, due diligence generally means you took all reasonable precautions and exercised all due diligence to avoid an offence. Records are often how you show that — not a magic shield, but evidence of a serious system.

Useful records are contemporaneous, attributable and complete enough to tell the story: what was checked, what failed, and what was done next.

What good looks like operationally

Opening/closing checks completed during the shift, temperature logs with times, corrective actions with owners, training matrices that show who is current, and documents that are not expired.

Paper can work; digital systems reduce “missing sheet” and “filled in later” failure modes when teams actually use them on the pass.

Frequently asked questions

Is a full digital trail required by law?+

Law focuses on safe food and appropriate management systems. Digital is optional; effective control and honest records are not.
