What is probe calibration?
Probe calibration (or an accuracy check against a known reference) confirms a thermometer is reading close enough to true temperature for your food safety controls.
Without it, cook checks, hot-holding and delivery rejects rest on an untrusted instrument.
Kitchen reality
Formal lab calibration and daily ice-point checks are different levels of assurance. Your procedures should say which you need and how often.
Record probe ID, date, method, result and action. Retire damaged probes instead of “living with” a bad sensor.
