Before service
Confirm the live allergen matrix matches today’s menu and specials. Brief staff on high-risk dishes and substitutions. Check labelling for PPDS items you sell packed for direct sale where Natasha’s Law applies.
If a supplier changed a product, update the matrix before lunch rush — not after a reaction.
On the pass
Clear communication between FOH and BOH, separate utensils where required, and no “guessing” when a guest declares an allergy. Escalate to a manager when information is incomplete.
